Suggestions:
First, make sure the tip of your pen is actually on the paper.
As with all other percept classes, if nothing comes to mind within three seconds, move on. Ain't no big deal, don't worry about it.
If you "know" something is there but no word comes to mind within three seconds, write u/i (short for unidentified) and move on. Ain't no big deal, don't worry about it.
Your worry interferes with the perception of the data. Nothing will fix this except more practice and adopting the "Just screw it" attitude Ed mentions in the DVDs.
Structure is everything. Content will take care of itself if you take care of the structure.
